Bacon Covered Meatloaf

Preparation time: 15 minutes

Cooking time: 50 minutes

Overall time: 1 hour 5 minutes

Serves: 10 to 12 people

Recipe Ingredients:

· 1 spring onion, sliced

· 2 cloves of garlic crushed

· 750 g of mince/ground beef

· 750 of g mince/ground pork

· 2 eggs - medium lightly beaten

· Handful fresh parsley chopped

· Handful fresh basil chopped

· 2 slices of bacon diced

· 2 tablespoons of sun-dried tomatoes chopped

· 2 teaspoons of dried oregano

· Salt and pepper to taste

· Vegetables of choice diced/grated/shredded

· 6 slices of bacon to cover the meatloaf

· Optional - if not paleo you can add 100g / 3.5 grated cheese of choice to the meatloaf mixture

Cooking Instructions:

1. Oil and line a baking tray before you start. Put all the ingredients in a large mixing bowl.

2. Mix together with your hands until all the ingredients are thoroughly incorporated together.

3. Form into a large meatloaf shape on the lined baking tray. Cover with the bacon slices and sprinkle on parmesan cheese.

4. Bake at 180C/350F for 50 minutes or until thoroughly cooked in the centre. Serve immediately and Enjoy!

Spaghetti Squash with Meat Sauce

Preparation time: 10 minutes

Cooking time: 1 hour

Gross time: 1 hour 10 minutes

Serves: 2 to 4 people

Recipe Ingredients:

· 1 spaghetti squash, split lengthwise and seeded

· ½ lb. ground pork (or beef, turkey, or chicken)

· 15 oz. of can of fire-roasted diced tomatoes

· 1 tbsp. of Italian seasoning

Cooking Directions:

1. Preheat oven to 350 0 F and season cut squash with salt and brush with a little avocado oil. Place cut side down in a baking dish. Bake for about 40 minutes.

2. The time may vary a little depending on the size of the squash. Check after about 35 minutes. It should be tender and let it cool.

3. Using a fork, pull strands out of squash halves. While the squash is baking, prepare the simple meat sauce. In a skillet, cook pork until there is no pinker.

4. Add the tomatoes and Italian seasoning and allow to boil. Reduce heat and let simmer until squash is ready.

5. Spoon cooked spaghetti squash into 2 to 3 bowls. Top with meat sauce. Season with salt if necessary. Enjoy!
